We build thick, gooey cookies, Basque and New York cheesecake, tres leches, and custom cakes \u2014 entirely from scratch, with real butter. The name \u201cDulce\u201d is Spanish for <em>sweet<\/em> \u2014 not French, despite what people assume.<\/p>\n<p>&nbsp;<\/p>\n<h2>How it started: a home oven and a lockdown<\/h2>\n<p>Dulce began in 2019 as a home bakery \u2014 one oven, a small following, a lot of trial and error. Thu taught herself to bake the way a lot of great bakers start now: YouTube, repetition, and stubbornness (<a href=\"https:\/\/www.youtube.com\/c\/CupcakeJemma\" target=\"_blank\" rel=\"noopener nofollow\">Cupcake Jemma<\/a> got a lot of replays). Before baking, she\u2019d worked as a TikTok business account manager and a data analyst \u2014 useful skills for someone who\u2019d end up running a kitchen and a brand.<\/p>\n<p>Then 2021 happened. During Saigon\u2019s hardest COVID lockdowns, when most places shut, we kept going \u2014 online-only, made-to-order, because for stretches of it we were <em>living in the bakery<\/em> to stay operational. For a lot of isolated expats that year, a Dulce delivery was a small piece of home showing up at the door. We registered officially in December 2021, and we\u2019ve never taken outside<br \/>\ncapital. What you taste is what we built, slowly, ourselves.<\/p>\n<p>&nbsp;<\/p>\n<blockquote><p>\u201cThey were like, \u2018Oh my god \u2014 what are you doing? Self-taught, exacting, the one who decides when a recipe is actually ready.<\/li>\n<li><strong>Garret Nelson<\/strong> \u2014 co-founder, originally from Salem, Oregon, in the Willamette Valley. He runs marketing, recipe R&amp;D and direction (and cheerfully calls himself chief taster). The name <em>Dulce <\/em>comes from his side: growing up around Mexican <em>panader\u00edas<\/em> in Salem and Portland \u2014 tres leches and mil hojas on half the blocks \u2014 where \u201cdulce\u201d just means <em>sweet<\/em>.<br \/>\nSo \u2014 a Spanish word, Pacific Northwest baking. Not French, not fusion-for-the-sake-of-it. He\u2019s also a serious Saigon F&amp;B hand in<br \/>\nhis own right: a winner of <strong>Best Burger in Saigon (Judges\u2019 Choice)<\/strong>, a former kebabs-and-wraps owner, founder of the South African braai popup <strong>Braai Boets<\/strong>, and a consultant to local concepts like <strong>Lubu<\/strong> \u2014 that\u2019s the operator\u2019s eye he brings to Dulce\u2019s menu and direction. Before all that he took a degree in <strong>strategic branding<\/strong> at the <strong>University of Oregon<\/strong>, served in the military, and has spent a decade-plus in Vietnam \u2014 <strong>ten years teaching<\/strong>, plus corporate training and soft-skills English for the likes of <strong>VNG<\/strong> and HCMC logistics firms. The \u201cAmerican who runs the brand and actually knows Saigon\u201d part isn\u2019t a line; it\u2019s the r\u00e9sum\u00e9.<\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<blockquote><p>\u201cThere\u2019s a lot of value in watching someone eat their first Dulce. If we can make it better in-house, we do.<\/li>\n<li><strong>Real butter, no preservatives.<\/strong> It\u2019s why our cookies go stale like real cookies should, and why people can taste the difference.<\/li>\n<li><strong>A HACCP-certified kitchen<\/strong> in District 3 \u2014 the unglamorous part of doing this properly.<\/li>\n<li><strong>Generous by default.<\/strong> Big Pacific Northwest portions, warm service. We hire for heart first and skill second, because the room should feel as good as the cake.<\/li>\n<li><strong>Part of the neighbourhood.<\/strong> We work closely with <strong>Laws For Paws Vietnam<\/strong>, supporting local animal rescue \u2014 being a good neighbour matters to us as much as being a good bakery.<\/li>\n<\/ul>\n<p>We borrow flavours from everywhere \u2014 Japanese matcha, Spanish-style Basque, Vietnamese kem chu\u1ed1i, <a href=\"https:\/\/dulcedesaigon.com\/vi\/san-pham\/banh-quy\/\">New York cookies<\/a> \u2014 and finish them our way. Today that\u2019s <strong>4.8 stars from 682 Google reviews<\/strong> and a <strong>TripAdvisor Travelers\u2019 Choice<\/strong>.
