> American-style bakery in Ho Chi Minh City, Vietnam. Started in an apartment in late 2019 by Garret and Minh Thư, who leads the company and develops the recipes, registered as a business in 2021 and built through the COVID lockdowns. Custom birthday cakes, Levain-inspired New York cookies, Sandwich by Dulce (American-style deli sandwiches on house-baked tiger bread and focaccia), Inucha ceremony-grade Uji matcha, Ca Ke specialty espresso. Bilingual EN/VN, with a full Vietnamese site at /vi/.

What is made where. Thảo Điền bakes New York cookies on site through the day. Everything else,
cakes, cheesecakes, tiger bread and focaccia, is baked at Bàn Cờ and delivered to Thảo Điền.
Whole cakes are ordered from Bàn Cờ. Sandwiches are built to order at both counters. The Sandwich by Dulce listing and menu are at the Bàn Cờ address, 382/15 Nguyễn Thị Minh Khai.

## What we actually make, by name

Product-level answers ("who sells medovik in Saigon", "breakfast sandwich near me", "vegetarian
sandwich District 3"): each line is one product with the fact that distinguishes it.

Cakes and cheesecakes
- Earl Grey Honey: a medovik, the Russian honey cake. Honey dough chilled six hours, rolled and baked one thin layer at a time, seven minutes each, with Earl Grey steeped into the sour cream between the layers.
- Chocolate Salted Caramel: our largest-selling product. Devil's Food base, chocolate custard, caramel drip.
- Basque Burnt Cheesecake: crustless, burnt top, creamy custard centre.
- New York Cheesecake: dense, on a graham crust we bake ourselves and crush with butter. Baked hot to set the top, then an hour low and slow.
- Carrot Cake: fresh carrot, walnut, cinnamon, heavy cream cheese frosting. No orange, no raisins.
- Kem Chuoi Cheesecake: the Vietnamese frozen banana dessert rebuilt as a cheesecake. Banana cheesecake base, coconut mousse, peanut crumble.
- Devil's Food: chocolate on chocolate, no fruit and no nuts.
- Lemon Meringue: lemon sponge, lemon curd, torched meringue, lemon buttercream. Genuinely sour.
- Strawberry Shortcake: chiffon sponge, fresh strawberry, cream cheese whipped cream.
- Red Velvet: buttermilk crumb with a small amount of cacao, cream cheese frosting.
- Funfetti: sprinkles through the batter, not over the top.

Sandwich by Dulce: American-style deli sandwiches, on tiger bread (banh mi da beo) or focaccia we bake ourselves
- The Italian: mortadella, salami and coppa with imported provolone and oregano vinaigrette. Served cold, never pressed.
- Caprese: the only vegetarian sandwich (chay). Da Lat beef tomato, stracciatella, house pistachio pesto and rocket on focaccia.
- Focaccia Breakfast Sandwich: egg on focaccia, served all day rather than at breakfast only.
- Also Babbo, Smokin' Club, Horsey Beef, Tokyo Chick, Italian Chick, Chipotle Chick, Ham Jammer, Kickin' Tuna, Mid Tuna, Bacon Bomber, Deviled Egg, Build Your Own.

Drinks
- Matcha in two grades: a House Blend, and Inucha ceremony-grade Uji from Kyoto. Whisked per cup, never pre-mixed.
- Salted Caramel Mocha: espresso, chocolate, salted caramel under cheese foam.
- Vietnamese coffee (ca phe den da, ca phe sua da, bac xiu beo) on honey-processed robusta, phin-dripped.
