We even make our own marshmallows, graham crackers, and jam from scratch. We can&rsquo;t \u2014 because here, the shelf versions of things like<br \/>\n<strong>marshmallows and graham crackers are stale and just wrong for Western baking.<\/strong> So we take it into<br \/>\nour own hands:<\/p>\n<ul>\n<li><strong>Marshmallows<\/strong> \u2014 house-made, soft and fresh (the store-bought ones here aren&rsquo;t), and the reason<br \/>\n  our miso\u2013marshmallow\u2013cornflake <a href=\"\/vi\/blog\/banh-quy-new-york-sai-gon\/\">cookie<\/a> works.<\/li>\n<li><strong>Graham crackers<\/strong> \u2014 we bake our own for the New York cheesecake base and the cookie-cheesecake<br \/>\n  bar; the imported ones are stale and not the real thing (the Basque stays crustless).<\/li>\n<li><strong>Strawberry jam<\/strong> \u2014 made from <strong>\u0110\u00e0 L\u1ea1t strawberries<\/strong>, not a tub of bright-red syrup. We&rsquo;d still rather make it than serve something stale.<\/p>\n<h2>The ingredients we don&rsquo;t compromise on<\/h2>\n<ul>\n<li><strong>Real butter, never margarine.<\/strong> Flavour and tenderness come from butter \u2014 it&rsquo;s the single<br \/>\n  biggest reason our <a href=\"\/vi\/blog\/banh-quy-new-york-sai-gon\/\">b\u00e1nh quy<\/a> taste rich instead of waxy.<\/li>\n<li><strong>Real cream cheese, no gelatin.<\/strong> Our cheesecakes are baked, not set; our cream cheese frosting<br \/>\n  (on cinnamon rolls, red velvet and carrot cakes) has real tang and depth, not just sugar.<\/li>\n<\/ul>\n<h3>The Partners We Trust<\/h3>\n<p>For the few things we don&rsquo;t make ourselves, we partner with suppliers who care as much as we do:<\/p>\n<ul>\n<li><strong><a href=\"https:\/\/puratosgrandplace.com\" target=\"_blank\" rel=\"noopener\">Puratos Grand-Place Vietnam (PGPI)<\/a>:<\/strong> We use their chocolate because they bridge <a href=\"https:\/\/en.wikipedia.org\/wiki\/Belgian_chocolate\" target=\"_blank\" rel=\"noopener nofollow\">Belgian chocolate<\/a>-making heritage with Vietnamese cocoa. Their Cacao-Trace program ensures sustainable farming and fair pay for local farmers right here in Vietnam.<\/li>\n<li><strong><a href=\"https:\/\/inucha.com\" target=\"_blank\" rel=\"noopener\">Inucha Matcha<\/a>:<\/strong> Our matcha doesn&rsquo;t come from a generic distributor. Our Inucha tier is ceremonial-grade, sourced directly from 100-year-old tea gardens in Ujitawara, Kyoto.
