As I put it to <a href=\"https:\/\/saucefish.com\/dulce-de-saigon-in-district-3-saigon\/\" target=\"_blank\" rel=\"noopener\">Saucefish<\/a> when they asked about it:<\/p>\n<p><em>\u201cThe motivation was finding a new sandwich experience that was cultivated from understanding that Vietnamese like crunchy topped bread.\u201d<\/em><\/p>\n<p>&nbsp;<\/p>\n<h2>Six months to earn the right to put a filling on it<\/h2>\n<p>This recipe isn\u2019t sitting on the first page of Google. It took my bakery team and me close to <strong>six months<\/strong> of trial and error \u2014 learning the bread, then learning how it behaves once it\u2019s wrapped, delivered, and eaten an hour later \u2014 before I felt confident enough to build sandwiches on it.<\/p>\n<p>That\u2019s the part people don\u2019t see. A great crust that\u2019s gone soft by the time you eat it isn\u2019t a great sandwich. He builds it <em>on b\u00e1nh m\u00ec<\/em>, eaten dipped in condensed milk. He was here first, full stop.<\/li>\n<li><strong>Caf\u00e9 Nh\u00e2m<\/strong> isn\u2019t who brought tiger bread before us either \u2014 they\u2019re known for pushing the<br \/>\n<strong>Vietnamese-side visibility<\/strong> of the <em>da beo<\/em> style, and good on them for it.<\/li>\n<li><strong>What\u2019s different about ours:<\/strong> I make it the <em>Ti\u1ebfng H\u00e0 Lan<\/em> way. The minute we put Dutch Crunch on the menu, Australians, Brits and Americans lit up \u2014 because the diaspora carried this technique everywhere. People who hadn\u2019t seen it since home recognised it instantly, sought it out, and told us so.
